Side dish I made for a Fourth of July BBQ. I give you, my Aunt Barb’s Potato Salad. This is the easiest, best potato salad in the world.
– 1lb of red potatoes
– Duke’s Mayo
– Fresh dill leaves
– Fresh tarragon leaves
– Salt / pepper
1. Fill a pot with water, set it on the stove, and add the potatoes. Turn the heat on high. Once the water reaches a boil, reduce the heat to medium and leave it on for another 15 minutes.
2. Remove the potatoes from the water. Once they cool, cut them into quarters (leave the skin on!).
3. In a large bowl, add quartered potatoes, mayo, and mustard. Toss together.
4. With a pair of kitchen scissors, snip the dill and tarragon into the bowl as well. Toss together once more, and add salt and pepper to taste.
That’s it! Easy, cheap, and perfect for any backyard BBQ affair.
